Ingredients
  

Main Ingredients:

  • 4 bone-in skin-on chicken thighs
  • 2 tbsp harissa paste
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Optional Garnishes:

  • Chopped fresh parsley or cilantro
  • Lemon wedges
  • Greek yogurt or labneh to serve on the side

Instructions
 

Make the Marinade:

  • In a bowl, whisk together harissa paste, honey, olive oil, garlic, lemon juice, salt, and pepper.

Marinate the Chicken:

  • Coat the chicken thoroughly in the marinade. Let sit for at least 30 minutes (or overnight in the fridge).

Sear:

  • Preheat oven to 400°F (200°C). Sear chicken skin-side down in an oven-safe skillet over medium-high heat for 3–4 minutes.

Roast:

  • Flip the chicken and transfer skillet to the oven. Roast for 20–25 minutes or until the internal temp reaches 165°F (74°C).

Rest & Serve:

  • Let rest for 5 minutes, garnish, and serve with your favorite sides.
